Organic Potato Starch: Special Ingredient for Every Chef

Organic Potato Starch is a product you can use for thickening sauces, soups, stews, and even pie fillings. Potato starch is made by crushing potatoes and washing the starch out of them. Then, the substance is dried and processed into a fine powder.

Please, do not mistake organic potato starch for potato flour. The flour is made by cooking, dehydrating, and crushing whole potatoes. Therefore, potato starch flour contains carbs and fiber and other essential nutrients from the root vegetable. It also has a distinct potato flavor.

You can use potato flour as a thickener in foods and gluten-free baking. However, note that you won’t be able to get a clear color when using it and still have the flour’s flavor.

Moreover, you can use this product as a cornstarch substitute. But remember that root starches, potato included, need less time to cook. Therefore, add them at the end of the cooking process. Grain starches, on the other hand, should be added in the beginning.

Ingredients for Homemade Rice Noodles:

Instructions

  1. In a large bowl, whisk together brown rice flour, potato starch, xanthan gum, and salt. Add eggs and water. Switch to a wooden spoon and stir until a dough forms.
  2. Generously dust your counter with brown rice flour. Turn dough out onto the counter (it will be crumbly) and knead a few times until fairly smooth. Cover ball and let rest 15 min.
  3. Divide dough into four equal pieces and work with 1 piece at a time, keeping the rest covered.
  4. On a lightly floured board, roll out the dough as thin as possible and slice the desired width (use a pizza cutter or sharp knife to slice the dough into strips).
  5. To cook immediately, add the noodles to boiling salted water and cook for 5 min until tender. Drain and serve immediately.
  6. To refrigerate, let the noodles dry for 1-2 hours so they won’t stick together, then transfer to a ziplock bag or airtight container. They will keep in the fridge for up to 4 days, or in the freezer for up to 3 months.

Ingredients for Apple Cinnamon Crepes:

  • 4 apples, peeled, cored, and chopped
  • 3 tbsp coconut sugar
  • 2 tbsp plant-based milk
  • ½ tsp potato starch
  • 1 tsp cinnamon 

Instructions

  1. To make the crepes combine all of the ingredients (except the oil) and mix until the batter is smooth.
  2. Let the batter rest for a few minutes. Heat a little oil in a medium-sized non-stick skillet over medium heat.
  3. Pour about ¼ cup of the batter in the center of the skillet and immediately spread it with the back of a ladle.
  4. Cook for about 1-2 minutes per side, or until lightly browned. Repeat the process of making crepes till the batter is finished.
    Note: After a while, the batter will get thicker, so you might need to add more milk.
  5. For the apple filling, add all ingredients to a skillet. Cook the mixture for a few minutes over medium heat till the apples get soft, yet maintain their shape.
  6. Place a few tsp of filling onto each crepe, roll it up and serve warm with a drizzle of caramel sauce or maple syrup.

Notes:

  • Instead of buckwheat flour you should be able to use rice flour or quinoa flour
  • Potato starch can be replaced with other starch powders such as tapioca starch, arrowroot starch or cornstarch
