Black Turtle Beans are shiny, dark, and rich in flavor. They originate from Central and South America, however, now the major commercial producers of black beans are India and Brazil. This particular variety of beans is very close to red and white beans in many ways. How to Sprout Black Beans at Home

  1. To get 3 Cups of Black Turtle Beans Sprouts. You need to get 3 Tablespoons of beans, transfer them into a bowl or your sprouter. Add twice as much cool (60°-70°) water. Mix beans up to ensure water is evened out between the beans.
  2. Allow beans to soak for 6-12 hours. Empty the beans into your sprouter (if necessary). Drain off the soak water. Rinse thoroughly with fresh (60°-70°) water. Drain thoroughly! Set your Sprouter anywhere out of direct sunlight and at room temperature (70° is optimal) between Rinses. Ensure sufficient air-circulation provided.
  3. Always be sure to Drain very thoroughly. The most common cause of inferior sprouts is inadequate drainage. Rinse and Drain every 8-12 hours again for three days.

Ingredients for Cozy Autumn Black Bean Soup:

  • 2 cups dried black beans, soaked and rinsed
  • 1/2 tbsp olive oil
  • One large onion, chopped
  • Two carrots, chopped
  • Three cloves garlic, finely chopped
  • 1 tbsp ground chili powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Two bay leaves
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 4 cups vegetable broth
  • for serving: chopped fresh cilantro or parsley and lime wedges

Instructions

  1. Soak the beans overnight for about 8-12 hours. Drain and rinse.
  2. In a large soup pot, heat oil over medium heat. Add onions, carrots, and garlic. Cook, frequently stirring, until onions are translucent and starting to brown about 10 minutes.
  3. Add all the other ingredients to the pot except the lime and parsley. Stir to make sure everything is combined. Bring the mixture to a boil before reducing the heat to medium, and let the soup simmer for about 40 minutes or until the beans are tender and creamy. Remove bay leaves.
  4. You can keep the beans whole or puree them using an immersion or traditional blender to your desired texture.
  5. Taste the soup and season with additional salt and pepper, if needed. Spoon soup into bowls for serving and garnish with lime wedges and parsley.
