Chia seeds are one of the most popular superfoods today. It doesn’t come as a surprise since they contain a large amount of calcium, potassium, and iron. These seeds are also rich in Omega 3 acids, antioxidants, proteins, and fiber. Chia seeds also have gained popularity among the US vegetarians as an excellent source of vegetable calcium: 100 g of seeds contain 631 mg of calcium, which is twice as much as in a glass of milk. 

White and black chia seeds have very little difference in content. Basically, white chia seeds are slightly bigger and contain more essential acids, while black seeds are more abundant in proteins. Due to esthetical reasons, people usually use black chia in salads or drinks to see each seed separately from another, but they use white chia seeds in bulk.

Most people with a healthy lifestyle consider chia to be an integral part of their diet. They are eaten both raw and added to smoothies, yogurts, cereals, and salads. Another option is to grind chia seeds in a coffee grinder and add the resulting “flour” to bread or pancakes.

Ingredients for Mango Chia Breakfast Popsicles:

For the chia pudding layer:

For the mango yogurt layer:

Instructions

  1. Combine chia pudding ingredients in a bowl or jug, whisk well and refrigerate for at least an hour (or overnight).
  2. Combine mango layer ingredients in a blender and process until smooth.
  3. Pour the mango layer into the molds and top with a chia pudding layer.
  4. Place in the freezer for at least 4 hours.
  5. To remove the popsicles submerge the bottom of the popsicle mold (up to the edge of the top) in room-temperature water for 10-15 seconds, then gently pull to release.

Ingredients for Layered Acai White Chia Pudding:

Layer 1:

  • 1/4 cup organic white chia seeds
  • 1 cup almond milk
  • 2 tsp organic acai powder
  • 1 tbsp maple syrup

Layer 2:

  • 1/2 cup fresh or frozen sweet cherries or raspberries
  • 1 frozen banana
  • 1/2 cup almond milk

Instructions

  1. Mix all the ingredients in layer 1 in a bowl until well combined.
  2. Place in the fridge and let sit for 2-4 hours until you have a thick texture.
  3. Spoon your chia layer into the bottoms of a cup or jar.
  4. Next, in a blender, blend all ingredients in layer 2. Carefully pour into your cup on top of the chia pudding.
  5. Garnish with some fresh berries and enjoy!
