    I have not used fennel seeds before and may need a grinder which is to be expected for the whole seed. I did use it and know I will use it again. I am not sure that I will use it often enough to reap the health benefits but have no objection at all. It is good to combine with other seasonings and realize there are other applications.

    I ordered the Fennel Seed Whole, 3 Lbs because I use Fennel in my sausage gravy at work. For the price, I paid compared to the grocery store price ($5 and some change for not even 2 ounces) is unbelievable! I will order from Food to Live in the near future.

    Quick delivery, good packaging of the fennel seeds and I look forward to repeat orders. I’m using the crushed seeds to make fennel tea to avoid taking a diuretic for water retention…French women have used it for years. Why are we so dumb???

    These seeds are fresh and aromatic, especially compared to the seeds in a bottle from the supermarket. This is also a great price for such a large quantity–I feel like I can use them to make fennel tea without worrying that they are too expensive to use by the tablespoonful.

    This product was delivered as promised. I love cooking healthier; however the supermarket options for doing so are out of my price range. This huge 1# sack of fennel seeds cost as much as 2.25 little jars (1.5 ounces each!) and has better flavor by far. Delicious! And how cool does my spice cupboard look with 1 quart mason jars full of attractive herbs and spices?

un-Dried Tomato Couscous with Fennel & Caraway Seeds
Ingredients:

  • 1½ cups of couscous
  • 2 cups of water
  • 5 tablespoons of tomatoe paste (or make your own with 7 sundried tomatoes in oil, 2 cloves of garlic, 2 tbsp veggie broth & teaspoon lemon juice – put into food processor and process into paste)
    pinch of salt & fresh ground black pepper


Fennel Salad:

  • 2 small fennel bulbs
  • handful of mint, chopped
  • 3 teaspoons of caraway seeds toasted – http://bit.ly/1MXqsnQ
  • 1 lemon squeezed of juice
  • 1 tablespoon olive oil
  • pinch of salt & fresh ground pepper


Instructions:


Couscous:

  1. Boil 2 cups of water. Put couscous into a bowl and pour the water over. Add the tomato paste, stir and cover the bowl with a plate for 10 minutes.
  2. Meanwhile, make fennel salad


Fennel Salad:

  1. Whisk together lemon juice and olive oil dressing. Add salt and pepper to taste
  2. Grate 2 small fennels
  3. Toss with chopped mint and dressing.
  4. Put couscous on a large plate.
  5. Top the middle with fennel salad. Garnish with caraway seeds or toasted nuts.
