Ingredients for Dreamy Violet Macarons:

For the macaron shell:

  • 1 ⅓ cups (128g) almond flour
  • 1 cup (130g) powdered sugar
  • 1 tbsp purple sweet potato powder
  • 100g egg whites (usually between 3–4 large egg whites)
  • ¼ tsp (1g) cream of tartar
  • ⅓ cup (70g) superfine sugar

For the buttercream filling:

  • ½ cup unsalted butter, softened to room temperature
  • 1 cup powdered sugar
  • 2 tbsp milk
  • vanilla extract
  • 2 tsp purple sweet potato powder

Instructions

  1. Line 2 large baking sheets with silicone baking mats or parchment paper. Set aside.
  2. Separate egg whites, making sure to leave no traces of egg yolks. Add cream of tartar. Beat together on medium speed until very soft peaks form.
  3. Add about 1/3 of the superfine sugar. Beat on medium-high speed for 5 seconds, then with the mixer continuing to run, add another 1/3 of the sugar. Beat for 5 seconds, then with the mixer continuing to run, add the remaining sugar and purple sweet potato powder. Beat on medium-high speed until stiff glossy peaks form.
  4. In the bowl of a food processor, combine the powdered sugar and almond flour, and process on low speed, until extra fine. Sift the almond flour mixture through a fine-mesh sieve into a large bowl.
  5. Slowly fold the beaten egg whites into the almond flour mixture in 3 separate additions, folding until combined before adding the next addition. After the last addition of almond flour, continue to fold slowly until the batter falls into ribbons and you can make a figure 8 while holding the spatula up.
  6. Spoon the macaron batter into a piping bag fitted with a medium round piping tip.
  7. Pipe the macarons onto the silicone baking mat in 1½-inch (3-cm) circles, spacing at least 1-inch (2-cm) apart. The piped macaron batter flattens out. Bang the pan a couple times on the counter to pop any air bubbles.
  8. Let the piped macarons sit out until they are dry and no longer tacky on top, usually 60 minutes. 
  9. Meanwhile, preheat the oven to 300°F (150°C).
  10. Bake for 15 minutes. As the macaron shells bake, they should form feet. 
  11. Let the shells cool on the baking sheet for 15 minutes, then transfer to a cooling rack to continue cooling.
  12. Make the buttercream filling: with a handheld or stand mixer, beat the butter on medium speed until cream. Add powdered sugar, sweet potato powder, and milk. Beat until smooth.
  13. Transfer the buttercream to a piping bag fitted with a round tip.
  14. Add a dollop of buttercream to one macaron shell. Top it with another macaron shell to create a sandwich. Repeat with remaining macaron shells and buttercream.
  15. Place in an airtight container for 24 hours to “bloom”. Enjoy!

Ingredients for Almond Flour Blueberry Muffins:

  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 3 flax eggs (3 tbsp flax seed + 9 tbsp water)
  • 1/4 cup maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup organic blueberries, fresh or frozen

Instructions

  1. Preheat oven to 325 degrees.
  2. Line muffin tin or grease.
  3. Make the flax egg: combine the ground flaxseeds with the water in a small bowl and mix with a fork. Set aside for at least 10 minutes to gel.
  4. Place dry ingredients in large bowl, and stir to combine.
  5. Place wet ingredients including the “egg” in a medium bowl, and stir to combine.
  6. Place wet ingredients in the dry ingredient bowl, and stir to combine, being careful to not over mix.
  7. Fold in blueberries, being careful to not over mix.
  8. Fill muffin cups 3/4 full.
  9. Bake for 22-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  10. Cool, and enjoy!
  11. Store in an airtight container for up to three days or freeze.

Great for baking and even though I was concerned that it would not be gluten free, I used a gluten tester and its 100% gf! A godsend for those of us with coeliac disease.

Use this regularly for baking and crunch toppings. I stumbled on this from my subscribe and save at Amazon. It is exactly what I need for good baking (cookies, cake, scones, etc.) and it is great for fruit (mix with panko, dip fruit and roast!).
I have recently discovered I am sensitive to gluten, and was excited to find almond meal makes a good substitute for flour. I have used it in place of white flour when making muffins, and it makes a moist, flavorful muffin. When baking, I find it does not rise as much as regular flour, but the flavor makes up for it. Almond flour also makes a wonderful pie crust. Just mix with butter or lard and press it into the pan. I have not tried the rolled pie crust yet but I imagine it would work fine as well.
Great Product, Tastes Good! This product tastes great and bakes perfectly. There aren't a lot of options locally for us to get almond flour except specialty stores that charge way too much for a small amount. This was an excellent option for us and I would absolutely order this again. Very happy with my purchase.
