Baking is an art, and Organic Spelt Flour will help you excel in it. This flour is more delicious and nutritious than regular wheat flour. However, its texture is similar to wheat, so you can easily use it in any recipe, like cake or muffins. Organic Spelt flour retains maximum nutrients because its processing is minimal. Therefore, by adding it to baked goods, you not only enhance the taste but also infuse them with fiber and plant proteins. Whole Spelt flour also contains essential minerals, including zinc and iron. Please be advised that Spelt is a type of wheat, and therefore, this flour contains gluten. However, the level of gluten in Spelt is low; people on a low-gluten diet may enjoy Spelt bread and other baked goods. *The exception is completely gluten-intolerant consumers.

Taste and Uses

Organic Spelt flour is similar to wheat flour in texture and properties. However, they aren’t identical, so you can’t use them as a complete substitute for all-purpose flour. Note that Spelt flour is “lighter” than whole wheat flour; therefore, products baked with it are lighter and fluffier. Use organic white Spelt flour in a recipe by substituting fifty percent of regular wheat flour. Assess the texture of the dough and increase or decrease this amount in future baking projects. Remember that this flour absorbs less liquid. So you’ll need to add more flour or reduce the amount of liquid in the recipe. Otherwise, the dough will be too sticky. You can buy organic Spelt flour in bulk as it keeps well for six months in a pantry. It will last for a year if you store it in the fridge.

Ingredients for Chocolate Hazelnut Babka:

For the brioche dough:

  • One envelope (2 ¼ tsp) of active dry yeast
  • ¾ cup (180 ml) whole milk, lukewarm
  • 4 tbsp sugar
  • Three ¾ cups (565g) of Spelt flour
  • ½ tsp salt
  • Two eggs, at room temperature
  • 115g (8 tbsp) unsalted butter at room temperature

For the filling:

For the brioche dough:

  • One envelope (2 ¼ tsp) of active dry yeast
  • ¾ cup (180 ml) non-dairy milk, warm (such as almond or oat milk)
  • 4 tbsp organic cane sugar
  • Three ¾ cups (565g) of Spelt flour
  • ½ tsp salt
  • Two flax ‘eggs’ (2 tbsp milled flax seeds + 6 tbsp water)
  • 115g (8 tbsp) unsalted vegan butter, at room temperature

For the filling:

  • 1 ½ cups homemade chocolate hazelnut spread
  • 1 cup chopped roasted blanched hazelnuts

For the vegan ‘egg wash’:

  • 1 tsp maple or agave syrup + 2 tbsp almond milk

Instructions

  1. In a small bowl, combine the yeast, milk, and 2 tbsp of sugar. Mix well, and leave to sit for 10-15 min, or until foamy.
  2. In the bowl of a stand mixer fitted with the dough hook, combine the flour, salt, and remaining 2 tbsp sugar. Mix to combine. Add the eggs and foamy yeast mixture to the bowl. Mix on low until the dough starts to come together. Then, increase the mixer speed to medium, and mix for another 10 min, until the dough is soft and smooth.
  3. Reduce the mixer speed to low, and add the butter a little at a time. This process should take 3-4 min. Once the butter is fully incorporated, increase the mixer speed to medium, and mix for a further 5 min, until the dough is very soft and smooth.
  4. Transfer to an oiled bowl, and cover with a clean kitchen towel. Place in a warm spot until doubled in size, approximately 1 – 1 ½ hours.
  5. Lightly grease two loaf pans and line with parchment paper.
  6. Divide the dough in half. Roll out dough on a lightly floured surface and shape it into a rectangle measuring 16×14 inches (40×35 cm). Position dough so that the long side is closest to you. Spread half of the hazelnut over the rectangle using a spatula, leaving a ½-inch/1cm border. Sprinkle half of the nuts on top.
  7. Use both hands to roll up the rectangle like a roulade, starting from the long side closest to you and ending at the other side.
  8. Using a serrated knife, gently cut the roll in half lengthwise, starting at the top and finishing at the seam. You should have two long, even halves with the layers of dough and filling visible along the length of both.
  9. With the cut sides facing up, gently press one end of each half, then lift the right half over the left half. Repeat the process, raising the left half over the right to create a simple two-pronged plait. Finally, gently squeeze the other ends, leaving you with two intertwined halves showing the filling on top.
  10. Carefully lift the loaf into a loaf pan. Don’t worry if there are gaps in the pan since the cake will rise and look fine, even if you feel messy at this point.
  11. Cover the loaf pans with a kitchen towel and place in a warm spot to rise for 45 min to an hour, or until the dough springs back lightly when pressed. While the loaves are proofing, preheat the oven to 350˚f / 180˚c.
  12. Brush the loaves lightly with egg wash. Bake for 40-45 min, or until the loaves are golden brown. Remove from the oven and cool completely before slicing. Store leftovers in an airtight container or wrap tightly before freezing.

An excellent Spelt flour! This is a wonderful brand, having been out of stock of my usual brand that I buy for Spelt flour, I opted to try this one. I am so happy I did! It is more of a whole grain Spelt that I was hesitant to try upon noticing it was not a white Spelt that I was hoping, however, it is richer and has more depth of flavor than regular white Spelt flour (which I love for all purpose baking), having said that I made a batch of chocolate chip cookies with this and it added a perfect compliment to the flavor that I was not expecting and I have made several batches since because I have been so happy with the results. The cookies have turned out so delicious! I am so excited to keep buying this for dessert recipes from now on! I will update my review as I try new recipes as well. I highly recommend this flour as a healthy, organic whole grain Spelt! The price is definitely a plus as well!

Love Spelt Bread!! This is now my favorite flour. It has a very delicious taste. I used it to bread my shrimp and it was sooo good. I also make my family bread with it which came out so good my kids prefer it.
