Ingredients for Creamy Carrot and Ginger Soup:

  • 1 tbsp olive oil
  • 1 lb carrots peeled and chopped (baby carrots are also fine)
  • 1 medium-sized yellow onion chopped
  • 3 cloves garlic
  • 3 tbsp chopped fresh ginger
  • 1 tsp fresh turmeric
  • 1/2 tsp salt + more to taste
  • 4 cups (950 ml) vegetable stock
  • 2 cups coconut milk
  • black sesame seeds
  • lamb’s lettuce

Instructions

  1. Begin by heating up a large pan to medium-high heat. Add the olive oil.
  2. Add carrots, onion, garlic, turmeric, and ginger. Cook about 5 minutes.
  3. Add vegetable stock, bring to a boil.
  4. Reduce heat to simmer. Cook until carrots are nice and soft, about 30 minutes. Slowly stir in coconut milk.
  5. With an immersion blender, blend soup until smooth. You can also use a regular blender and blend in batches.
  6. Add salt to taste. Serve with black sesame seeds and lamb’s lettuce.

Ingredients for Seared Wax Beans with Black Sesame Seeds:

  • 1 lb (450 g) yellow wax beans, trimmed
  • 4 garlic cloves, very thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp toasted black sesame seeds
  • 2 tbsp chili paste
  • 2 tbs soy sauce
  • sea salt

Instructions

  1. Bring a large saucepan of water to a boil over high heat. Generously salt the water, add the wax beans and blanch for 5 minutes. Drain the beans and transfer to the ice water to stop the cooking, then drain again.
  2. In a large frypan or wok over high heat, warm the olive oil. Add the garlic and cook, stirring frequently, until light golden brown and fragrant, about 2 minutes. (Be careful not to let the garlic turn dark brown off it will turn bitter.)
  3. Add the blanched wax beans to the pan cook, stirring frequently, until the beans are just beginning to darken in color and are crisp-tender, about 3 minutes.
  4. Add half of the sesame seeds and cook, stirring, until toasted, about 1 minute.
  5. Add the chili paste and soy sauce and stir to coat.
  6. Transfer the beans to a serving platter, sprinkle with the remaining sesame seeds and serve immediately

Ingredients for Rainbow Spring Rolls with Peanut Sauce:

For the spring rolls:

  • 8 rice paper wrappers
  • 1/2 ear corn shaved
  • 1 carrot julienned
  • 1/2 medium cucumber julienned
  • 1 red bell pepper julienned
  • 100 grams or 1 cup red cabbage sliced
  • black sesame seeds

For the peanut dipping sauce:

Instructions

  1. Start by soaking the rice paper as per instructions on the package.
  2. Prepare all the vegetables before assembling the rolls.
  3. Use a food processor or an immersion blender to pulse the peanuts until smooth. Add ginger powder, garlic powder, black sesame seeds, and sweet chili sauce. Add some warm water to thin it up.
  4. Put your first wrapper on a cutting board and place a small portion of your vegetable slices very tightly on the bottom lower third of the wrapper. Sprinkle with a pinch of the black sesame seeds. Try not to overstuff the roll, as it may break. Roll everything tightly, just like a burrito, folding in the sides of the rice paper roll halfway.
  5. Cut each roll in halves and serve with the peanut dipping sauce. Enjoy!

Taste Great, Good for You, Too! My order arrived exactly when promised, was exactly what I expected from the photo, description, etc. I follow the Ayurvedic practice of chewing a spoonful of sesame seeds first thing each morning to keep my digestion humming. (Sesame seeds also are rich in calcium and other minerals.) Where I live, it's impossible to find unhulled sesame seeds, so I have to order them through Amazon. Food to Live's seeds are everything I want at a very fair price.
