Tropical Quinoa (Health Bars)
Ingredients:

  • 1½ cup dry raw quinoa
  • 2¾ cups water
  • ¾ cup full fat coconut milk
  • 3 flax eggs
  • 3 tablespoon whole chia seeds
  • 1 cup dried mango
  • ½ cup dried papaya
  • ½ cup dried figs
  • ½ cup honey or agave syrup
  • 3 cups shredded unsweetened coconut
  • ¼ teaspoon himalayan rock salt

 

Instructions:

  1. Rinse quinoa by placing it in a strainer and running it under water for 1 minute. Transfer for a medium sized saucepan, add water and cover. Bring to a boil, then reduce to simmer for 20-25 minutes. Don’t remove the lid while cooking. Once complete, remove lid and set aside.
  2. Combine coconut milk, eggs, and chia in a small bowl. Stir and set aside.
  3. Preheat oven to 325F and line a 9×13 pan with parchment paper across both sides for easy lifting and set aside.
  4. In a large bowl combine quinoa with the coconut milk mixture. Stir until fully combined.
  5. Add remaining ingredients.
  6. Press firmly into prepared pan and bake for 30-40 minutes or until lightly golden.
  7. Remove from oven and allow to cool for 20 minutes. Slide out of pan and continue to cool for another 40 minutes before cutting.

Vegan Cacao Fig Bliss Balls

Vegan Cacao Fig Bliss Balls

INGREDIENTS:

  • 1 cup Dried Figs, stems removed
  • 1 cup Almonds
  • ¼ cup Cacao Powder (Or Cocoa, Carob)
  • 1 tsp Vanilla Extract
  • ¼ tsp Cinnamon
  • Pinch of Salt
  • ½ tbsp Cacao Nibs (or Vegan Chocolate Chips)

 

INSTRUCTIONS:

1. Trim the stems off of the dried figs, if there are any. Place them in a medium bowl, cover with hot water, and let sit for 5-10 minutes.

2. In the meantime, pulse the Almonds in a food processor until the form a coarse meal. Add in the Cacao Powder, Vanilla Extract, Cinnamon, and Salt.

3. Drain the Figs, then add to the food processor. Process all ingredients until a uniform, crumbly “dough” forms.

4. Transfer the mixture to a bowl, then stir in the Cacao Nibs until evenly incorporated.

5. Using a 1 tbsp measure, form the dough into even balls – mine made about 19. Note: it helps to have your hands slightly wet for this step so the mixture will not stick to them.

6. Store in an airtight container in the fridge for up to two weeks, or in the freezer for up to 3 months.

Coconut Chai Fig Smoothie

Coconut Chai Fig Smoothie

INGREDIENTS:

  • 1 cup unsweetened coconut milk
  • ½ cup strongly brewed chai tea, chilled
  • 1 frozen banana, peeled and cut into 1-inch pieces
  • 4-6 dried figs, stems removed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • pinch sea salt
  • unsweetened shredded or flaked coconut, for serving
  • Optional boosts: collagen peptides or other protein source, coconut oil, ground flaxseed, greens or green powder.

 

Add all of the ingredients to a high speed blender. Blend until thick and creamy. Adjust seasonings and sweetness as necessary. Top with shredded coconut and a pinch of ground cinnamon.

    These were pretty good. Another site i ordered from, the figs tasted a bit fresher, but all in all this is a good buy and I will order again. we eat a lot of figs due to their high calcium content and other health benefits. These are organic, yea.

    • You speak well of the history –my problem is believing you and the quality you carry and ship out. Why I said this–I was told I would receive fresh nuts –I never did. What I received was stale and discolored nuts.

    i love Calamyria Figs, i keep sm bag of them in swim bag for after incase i need bloodsugar boost. i switched 2 you recently and I am very happy with them. Other brand came sometimes near black being overripe, nasty. Yours are delicious & still blond. I WISH YOU WOULD OFFER YOUR ASUKI BEANS in 20lb BAG Subscribe and Save. i eat them at breakfast and supper and thus the larger bag is the only way to go.
