Cooking Instructions

  • Rinse & drain buckwheat.
  • In a medium saucepan, combine 1 cup buckwheat groats (already toasted), 1 3/4 cups water, 1 Tbsp butter, and 1/2 tsp salt.
  • Bring to a simmer and cover with a tight-fitting lid.
  • Simmer on low for 18-20 minutes until it’s done.

Instructions

Activating buckwheat:

  1. Start the activation process by covering the 2 cups of buckwheat groats with water (‘Activating’ mimics natural process, releasing enzyme inhibitors so the seeds’ nutrients are more available to our bodies)
  2. Let soak overnight and in the morning, rinse and drain well. It will have slime on them so be sure to rinse it well.
  3. Fill again with water, letting soak for another 8 hours.
  4. Once completely sprouted, drain and rinse well again.

Making buckinis:

  1. Place activated buckwheat in a large bowl.
  2. Add all ingredients and mix very well, covering all the sprouted groats.
  3. Pour onto a parchment or silicone-lined baking tray and put into the oven on the lowest setting with the door slightly ajar. They should take about 8 hours to dehydrate. If you have a dehydrator, set it to 40 degrees and leave overnight.
  4. Once all is good and ready, use your deliciously chocolate caramelized buckinis in smoothies, yogurt, porridge, ice cream, salads, as a “cereal” and anything else you wish to have some crunch on.

Best on the market. This is the best quality and purest buckwheat on the market. You get so much for your money, organic clean as is buckwheat. I've been eating this brand for a few months with no complaints. I kept hearing how Russian buckwheat is so much more superior than anything in America. So I bought a smaller amount of Russian buckwheat from Russia with Russian packaging. There's no difference at all. This is safer because you know the source. I also buy other foods from this company including Brazil nuts. It's always a good experience with food to live.
