Food To Live Organic Buckwheat Groats are top-quality hulled seeds of the buckwheat plant, which is actually related to sorrel and rhubarb. This means that buckwheat is not, in fact, a grain, but a healthy whole grain alternative fruit seed.

While this food is technically categorized as grain from the cooking point of view, it doesn’t contain gluten. This means it’s a perfect protein source for every vegan and vegetarian who wants to go on a Paleo diet without including eggs and dairy in their meal plan. Vanilla Lucuma Buckwheat Smoothie

INGREDIENTS:

  • 1 1/4 cup cold, filtered water
  • 1/4 cup buckwheat, pre-soaked & drained
  • 1 pitted date, soaked and drained
  • splash of vanilla and/or almond extract
  • 1 frozen, sliced pear
  • 1/2 tsp maca powder
  • 1 pack/serving EPIC Protein: Vanilla Lucuma
  • pinch of cinnamon and nutmeg

INSTRUCTIONS:

Place all ingredients into a blender and mix until you get a smooth and creamy consistency. Add additional sweetener or ice if needed.

Buckwheat “Garden” Salad

Buckwheat "Garden" Salad

INGREDIENTS:

  • 1 cup buckwheat groats
  • 2 cups water
  • ½ tsp salt
  • ½ chayotte, finely diced
  • 12 large green olives, pitted and quartered
  • 1 small yellow bell pepper, diced
  • 1 cup broccoli florets, chopped
  • ¼ cup red onion, finely chopped
  • 50g walnut, chopped
  • ½ cup fresh dill, chopped
  • 2 tbs fresh mint, chopped
  • juice of 1 lime
  • 2 tbsp white wine vinegar
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

INSTRUCTIONS:

  1. In a small saucepan, bring water and salt to a boil. Add buckwheat groats, reduce heat, cover and cook until all water has absorbed, about 10 minutes.
  2. Remove lid and allow to cool for at least 30 minutes. You can also cook your buckwheat groats the previous day and let them cool overnight.
  3. Add all ingredients, including cooled buckwheat to a large mixing bowl. Mix until well combined.
  4. Serve immediately or refrigerate for a few hours (or overnight) to allow for flavors to develop.

Sweet Pumpkin Seed Protein Granola

Sweet Pumpkin Seed Protein Granola

Ingredients:

  • 3 cups rolled oats
  • ½ cup whole wheat flour
  • 2/3 cup pumpkin seeds
  • ¼ cup chia seeds
  • ½ cup unsweetened, dried flake coconut
  • 2/3 cup buckwheat groats
  • ½ tsp cinnamon
  • pinch of salt
  • 1 cup cooked split red lentils (or ½ cup split red lentils, dry)
  • ½ cup maple syrup
  • ¼ cup coconut palm sugar
  • ¼ cup coconut oil, melted

 

Instructions:

Making the Granola:

1. Preheat oven to 375F. Cook lentils (refer to cooking instructions below.)
2. In a large bowl, combine the oats, flour, pumpkin seeds, chia seeds, coconut, buckwheat groats, coconut sugar, cinnamon and salt.
3. Add the maple syrup, coconut sugar, melted coconut oil, and cooked red lentils. Mix thoroughly.
4. Line a baking sheet with parchment paper and spread the granola into a even layer over the entire surface.
5. Bake for 8 minutes. Remove from heat and cool for 5-10 minutes (the longer you allow the granola to cool, the more granola clusters you are likely to have at the end.) Mix and break up the granola before redistributing it evenly.
6. Bake for another 6 minutes. Remove from heat and cool for 5-10 minutes. Mix and break up the granola before redistributing it evenly.
7. Bake for another 4-5 minutes, or until granola is evenly toasted but not burnt. Watch the granola closely as it tends to burn suddenly and rapidly.
8. Cool completely before breaking into clusters and storing in an airtight container.

Cooking the Lentils:
Approx. ½ cup dry red lentils (split) = 1 cup cooked. Rinse ½ cup dry red lentils (split). Add the lentils and 1 cup of unsalted water to a small-medium sized saucepan. Bring to a boil and boil for 5-10 minutes (until lentils are just tender.)

Notes:
If you do prefer it a touch sweeter you can choose a sweetened non-dairy milk, add a dash of maple syrup or coconut palm syrup to each bowl, or add some dried fruit to the granola itself after it’s cooled.

    SO GLAD I found this. Organic Buckwheat Groats. 5 lb! My sister game me a fermented bread recipe with Buckwheat groats and Quinoa with AC Vinegar. I also love the texture.     I was happy to find a seller who offered 1 pound bags, I didn’t want bulk buys, very much enjoyed the groats, I washed them drained, roasted with grass fed butter in oven, then cooked in boiling salted water for ten minutes, removed from heat, added a tablespoon of butter, let sit for 20 minutes covered, fluffed and served with stir fry, nutty and firm, I was enjoying eating them toasted too.

    Excellent product. Their beans, buckwheat, etc. is the freshest I’ve ever seen. It sprouts faster than any other I’ve tried. And I love their heavy plastic bags that reseal well for storage.

    I’m on a kick to utilize buckwheat for its health benefits. I am on a low carb diet for medical reasons, and I’m sprouting them to lower the carb count a bit. Buckwheat is supposed to be good for inflammation, can help lower blood pressure and makes one think more clearly – or so some of the articles say. I’m enjoying working with buckwheat, and these groats sprouted quickly.

    For better taste, simmer it a bit on fry pan, than add water to cover it two inches above, let it boil for three minutes, cover with lid and turn off the fire. 20min later it’s ready.

    Ordering fast and easy ….Delivery ahead of time…..Nice and clean…I use them pretty much the same as oatmeal except I soak them over night and cook in micro for 1 minute stir add more milk if needed, cook 1 minute,stir….for 3 minutes total… then I add what I don’t want microwaved, stir and eat….Not bad….They do keep you full tho…Thank you Food To Live……

    I love this stuff. I eat it daily. I don’t eat any grains nor dairy products and this replaces the grains I use to eat years ago. I lift weights and have an active lifestyle and this helps tremendously with my workouts. Generally speaking this has made my life a heck of a lot easier since I eat paleo and don’t eat grains. Will continue to order as long as I can.
