Recipes

Ingredients for Salted Apricot Kernel Brittle:

  • 1 cup sugar
  • ¼ cup water
  • ¾ cup apricot kernels
  • ½ tsp baking soda
  • 2 tbsp butter
  • 1 tsp salt

Instructions

  1. Butter a baking sheet; set aside.
  2. Stir together sugar, water, and salt in a medium saucepan. Cook over medium-high heat, occasionally stirring, until sugar is dissolved.
  3. Continue cooking without stirring until mixture turns golden amber and smells caramelly, about 10 min (approximately 330 F, but the color plus smell is an exemplary signal)
  4. Remove pan from heat. Stir in apricot kernels. Place back on the heat until the mixture is more liquid (kernels will cool it down). Stir in butter and baking soda (mixture will foam up), then pour out onto a buttered baking sheet.
  5. Let cool completely, about 30 minutes. Break into pieces. Store in an airtight container.
