To remove the bitter outside skin, they are scalded with boiling water for a short period of time and then dipped in cold water, ceasing the cooking process. After that, the hazelnuts are peeled off and gently dried at 45°C (113°F) for 3 hours. This low-temperature processing allows them to be labeled as “raw” food.
