Velvety Carrot and Ginger Soup

A nourishing blend of healthy ingredients, warming spices, and immune-boosting goodness. Perfect for a nutrient-rich lunch or dinner.

  1. Start by warming a large pan over medium-high heat. Pour in the olive oil.
  2. Toss in the carrots, onion, garlic, turmeric, and ginger. Sauté for approximately 5 minutes.
  3. Pour in the vegetable stock and bring the mixture to a boil.
  4. Reduce the heat to a simmer and let it cook until the carrots become tender, which should take about 30 minutes.
  5. Gradually stir in the coconut milk.
  6. Use an immersion blender to puree the soup until it’s velvety smooth. Alternatively, if you don’t have an immersion blender, use a regular blender and blend it in smaller batches.
  7. Season the soup with salt to your liking. Serve it garnished with black sesame seeds and a handful of lamb’s lettuce. Enjoy!
