Raw Marzipan Truffles
This raw marzipan recipe is so simple and seriously delicious! Roll your marzipan into balls, then toss a few of each in shredded coconut, melted chocolate, and cacao powder to make a delicious vegan treat.

INGREDIENTS:
For the marzipan:
- 2 cups blanched slivered almonds
- 4 tbsp maple syrup
- pinch of sea salt
For the toppings:
- organic cacao powder
- organic shredded coconut
- vegan dark chocolate, melted
INSTRUCTION:
- Place the almonds in a food processor and process until fine and crumbly (about 1 min).
- To the food processor, add the maple syrup and sea salt, and process until the mixture begins to form a ball on the blade (about 2-3 min).
- Using a cookie dough scoop or tablespoon, scoop out balls of marzipan and roll them in your hands until smooth.
- Toss the marzipan balls in the toppings, or enjoy them as-is!
