Raw Marzipan Truffles

This raw marzipan recipe is so simple and seriously delicious! Roll your marzipan into balls, then toss a few of each in shredded coconut, melted chocolate, and cacao powder to make a delicious vegan treat.

  1. Place the almonds in a food processor and process until fine and crumbly (about 1 min).
  2. To the food processor, add the maple syrup and sea salt, and process until the mixture begins to form a ball on the blade (about 2-3 min).
  3. Using a cookie dough scoop or tablespoon, scoop out balls of marzipan and roll them in your hands until smooth.
  4. Toss the marzipan balls in the toppings, or enjoy them as-is!
