INGREDIENTS:
For the salad:
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup English cucumber, diced
- 1 avocado, diced
- ½ cup feta cheese, crumbled
- Half of red onion, sliced
- 2 tbsp mixed seeds (pumpkin + sunflower)
- 2 tbsp parsley or cilantro, chopped
For the dressing:
- 3 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tbsp white wine vinegar
- 1 tsp maple syrup
- Salt and black pepper
INSTRUCTIONS:
- In a large bowl, toss together the chickpeas, tomatoes, cucumber, avocado, feta, red onion, mixed seeds, and parsley.
- Whisk together olive oil, lemon juice, white wine vinegar, maple syrup, salt, and pepper in a small bowl or jar.
- Drizzle the dressing over the salad, toss gently to coat, and serve immediately.
