Ingredients:
- 2 carrots (diced)
- 2 cups chickpeas (cooked)
- 1 sweet potato (diced)
- 1 bell pepper (diced)

- 2 cloves garlic (minced)
- 2 cups tomatoes (diced)
- 2 cups vegetable broth
- ½ teaspoon cumin seeds (ground)
- ½ teaspoon red pepper flakes
- 1 tablespoon fresh basil (chopped)

- 1/8 teaspoon cinnamon
- salt and pepper to taste

Instructions:
- Heat up a pot with olive oil and sautee onion and garlic (add some salt) for 2-3 minutes.
- Add carrots and bell pepper and leave to simmer for about 3 more minutes.
- Put the rest of the ingredients into the pot, bring to a boil and let simmer until sweet potatoes become tender.

Ingredients:
- 1 onion (diced)
- 1 butternut squash (seeded and cut into small cubes)

- 5 cups vegetable broth

- 2 teaspoons coconut oil
- 2 teaspoons fennel seeds
- 1 teaspoon thyme
- salt and pepper to taste
Instructions:
- Melt coconut oil in a pot and sautee thyme and fennel seeds in it.
- Add squash and onions and sautee for about 5 more minutes. Be sure to add some salt and pepper.
- Fill the pot with broth and bring to a boil. Leave to simmer for about 20 minutes.
- Remove from heat and let the soup cool a bit before transferring it into a food processor.
- Add almond butter and process until you get smooth, creamy soup.
- Top with popcorn and serve.

- 6 cups broccoli florets

- 1 tablespoon apple cider vinegar
- 1 tablespoon canola oil

- Process soaked cashews and 1 cup of vegetable broth in a blender until smooth.
- Sautee garlic, onions, and broccoli in a large pot for 3-5 minutes.
- Add the rest of the ingredients (except vinegar) and bring to a boil. Let simmer for 15-20 minutes.
- Once the soup cools a bit, process it in a blender until smooth.
- Pour the soup back into the pot and heat it up with apple cider vinegar. Let simmer for 5 minutes and serve.
