Velvety Carrot and Ginger Soup
A nourishing blend of healthy ingredients, warming spices, and immune-boosting goodness. Perfect for a nutrient-rich lunch or dinner.

INGREDIENTS:
- 1 tbsp olive oil
- 1 lb carrots, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 tbsp fresh ginger, chopped
- 1 tsp turmeric powder
- Salt, to taste
- 4 cups vegetable stock
- 2 cups coconut milk
- black sesame seeds, for garnish
- lamb’s lettuce, for garnish
INSTRUCTIONS:
- Start by warming a large pan over medium-high heat. Pour in the olive oil.
- Toss in the carrots, onion, garlic, turmeric, and ginger. Sauté for approximately 5 minutes.
- Pour in the vegetable stock and bring the mixture to a boil.
- Reduce the heat to a simmer and let it cook until the carrots become tender, which should take about 30 minutes.
- Gradually stir in the coconut milk.
- Use an immersion blender to puree the soup until it’s velvety smooth. Alternatively, if you don’t have an immersion blender, use a regular blender and blend it in smaller batches.
- Season the soup with salt to your liking. Serve it garnished with black sesame seeds and a handful of lamb’s lettuce. Enjoy!
