Vegan “Tuna” Salad Sandwich

INGREDIENTS:
For “Tuna” Salad:
- 1 cup Great Northern beans, cooked
- 1 sheet nori
- 1/2 tbsp lime juice
- 1/2 red bell pepper, chopped
- 1 large stalk of celery, chopped
- 2 tbsp of Dijon mustard
- Himalayan salt and freshly ground black pepper, to taste
For Sandwiches:
- 8 slices whole-grain bread, toasted
- Lettuce leaves
- Tomatoes
INSTRUCTIONS:
- Tear the nori sheet into small pieces and put it in a food processor. Blend until it looks like flakes.
- Add beans, lime juice, mustard, salt, and pepper to the processor. Pulse until your vegan tuna salad is the texture you like.
- Transfer it to a bowl and mix in celery and bell pepper.
- Enjoy it on its own or make a sandwich. Just scoop some of the “tuna” mix onto one slice of bread, add your favorite toppings, and place the second slice on top.
