They are filling, take only a few minutes to make, and don’t have to be heated up, which makes them a perfect lunch for an office. The absolute best thing about salads is that they are very flexible in terms of ingredients. You can easily substitute the things you don’t like to create the flavor that would suit your personal taste. The ‘cooking’ process is also very simple, just mix the ingredients together and add the seasoning.
Vegan Superfood Salad with Sweet Potatoes and Pomegranate
- 3 cups sweet potatoes (chunks)
- 1 cup quinoa
- 1 ½ cup broccoli (steamed)
- 1 pomegranate
- 2 limes
- 1 punned salad cress
- 1 avocado
- 1 red chili (fresh)
- 1 bunch coriander (fresh)
- ½ cup ounce mixed nuts
- 1 pinch cinnamon (ground)
- 1 pinch coriander seeds (ground)
- 1 pinch chili flakes
- Olive oil
- Balsamic vinegar

Toss the sweet potato chunks in a bowl with spices and a bit of olive oil and roast them for 15 minutes at 400F. Chop avocado, salad, and fresh coriander and mix with sweet potato chunks when they cool. Add quinoa and broccoli. Make your seasoning by mixing juice of ½ pomegranate and limes with olive oil and balsamic vinegar. Garnish the salad with crushed nuts and the rest of the pomegranate seeds.
Multivitamin Vegan Superfood Salad with Fresh Blueberries
- ½ cup quinoa (cooked)
- ½ bunch kale
- ½ cup blueberries (fresh)
- ½ cup edamame (frozen and cooked according to instructions)
- ½ cup grapes (red and halved)
- ½ cup dried cherries
- ¼ cup sunflower seeds
- ¼ cup walnuts (lightly crushed)
Seasoning:
- ¼ cup orange juice
- Olive oil
- 1 clove garlic (minced)
- 1 teaspoon sugar
- Salt and pepper to taste
Mix the ingredients, whisk together the seasoning, combine and toss together in a large bowl. This salad tastes very refreshing in the summer and you can use fresh cherries if they are available.
Vegan Chana Masala Salad
- 1 onion (chopped)
- 1 ½ cup chickpeas (cooked)
- 1 tomato (chopped)
- 1 clove garlic (minced)
- ½ teaspoon cumin seeds
- ½ teaspoon coriander (ground)
- ½ teaspoon garam masala spice
- 1/8 teaspoon cayenne pepper
- 1 teaspoon lemon juice
- ¼ cup soymilk
- Salt to taste
Brown the onions and add all spices and liquid ingredients. Stir and wait a bit for everything to heat up then pour the hot seasoning over your chickpeas with tomatoes and toss. You can enjoy it right away or serve cold.
Vegan Superfood Salad Dressing with Maca Powder and Miso
- 1 tablespoon maca powder
- 1 tablespoon miso paste (light)
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon lemon juice (fresh)
- Cayenne pepper (to taste)
- Filtered water (if necessary)
Mix the ingredients using a blender to save time and effort. With this seasoning, you can turn any mix of ingredients found in your kitchen into a delicious and fantastically nutritious superfood salad. You can keep the seasoning in the fridge for up to a week.
