INSTRUCTIONS:

  1. Place a dry skillet or pan over medium heat.
  2. Add 2 cups of sesame seeds and toast them for about 3-4 min, stirring frequently. You’ll know they’re ready when they turn golden brown and become fragrant.
  3. Transfer the toasted sesame seeds to a food processor or blender.
  4. Blend on high until the seeds break down and begin to form a smooth paste. This process may take a few minutes, so be patient.
  5. Periodically stop the blender or food processor and scrape down the sides with a spatula to ensure even blending.
  6. Resume blending until your tahini reaches your desired consistency. Depending on your processor’s power, it may take 10-12 min of processing for the mixture to turn into a smooth sauce.
  7. Transfer to an airtight container. It can be stored in the refrigerator for up to a few weeks.

NOTES:

  • Use hulled sesame seeds for a smoother and creamier tahini.
  • Allow your tahini to cool before using it or transferring it to a storage container.
  • Get creative with your tahini by adding lemon juice, garlic, or other seasonings for extra flavor.
  • Enjoy the versatility of tahini in various recipes, from salad dressings to savory sauces and sweet treats.
