INGREDIENTS:
- 2 cups hulled sesame seeds
INSTRUCTIONS:
- Place a dry skillet or pan over medium heat.
- Add 2 cups of sesame seeds and toast them for about 3-4 min, stirring frequently. You’ll know they’re ready when they turn golden brown and become fragrant.
- Transfer the toasted sesame seeds to a food processor or blender.
- Blend on high until the seeds break down and begin to form a smooth paste. This process may take a few minutes, so be patient.
- Periodically stop the blender or food processor and scrape down the sides with a spatula to ensure even blending.
- Resume blending until your tahini reaches your desired consistency. Depending on your processor’s power, it may take 10-12 min of processing for the mixture to turn into a smooth sauce.
- Transfer to an airtight container. It can be stored in the refrigerator for up to a few weeks.
