Chocolate Caramelized Buckinis
These crunchy and sweet Chocolate Caramelized Buckwheat Groats are the perfect toppings for all your sweet meals and desserts. It’s a great way to get your daily dose of fiber.
Prep Time: 16 hours | Cook Time: 8 hours | Total Time: 1 day | Servings: 3 cups
INGREDIENTS:
- 2 cups raw buckwheat groats
- 2 tbsp cacao powder
- 2 tsp cinnamon
- 2 tbsp mesquite powder
- a few pinches of Himalayan pink salt
- 6-8 tbsp honey or maple syrup if vegan
INSTRUCTIONS:
Activating buckwheat:
- To kickstart the activation process, cover the 2 cups of buckwheat groats with water. This ‘activation’ step imitates a natural process, breaking down enzyme inhibitors so the seeds’ nutrients become more accessible to our bodies.
- Allow them to soak overnight. In the morning, rinse and drain thoroughly. You might notice a slimy residue, so make sure to rinse it off well.
- Refill with water and let them soak for an additional 8 hours.
- Once they’ve sprouted completely, give them another good rinse and drain.
Making buckinis:
- Take your activated buckwheat and put it in a big bowl.
- Add all the ingredients and give it a thorough mix, ensuring all the sprouted groats get coated.
- Spread the mixture onto a baking tray lined with parchment paper or a silicone mat. Put it in the oven on the lowest setting with the door slightly open. They’ll need about 8 hours to dry out. If you have a dehydrator, set it to 40 degrees and let them sit overnight.
- Once they’re nicely caramelized and ready, you can use these delightful chocolatey buckinis in various ways – in smoothies, yogurt, porridge, ice cream, salads, or as a cereal. Enjoy the crunch!
