INSTRUCTIONS:

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add a few popcorn kernels and cover. Once they pop, add the rest of the kernels in an even layer.*
  3. Cover the pot and shake it occasionally. Once the popping slows to about 2 seconds between pops, remove from heat.
  4. Add the popcorn to a large bowl and sprinkle with a pinch of salt. Toss to coat.
  5. In a microwave-safe bowl, melt the white chocolate chips in the microwave in 20-second intervals, stirring until smooth.
  6. Once melted, stir in the blue spirulina powder until fully combined. Adjust the amount of spirulina to achieve your desired blue color.
  7. Drizzle the blue chocolate mixture over the popcorn and toss gently to coat evenly.
  8. Sprinkle Halloween-themed candies over the coated popcorn and mix gently.
  9. Spread the popcorn mixture onto a baking sheet lined with parchment paper. Allow it to set for about 15-20 minutes until the chocolate hardens.
  10. Once set, break into clusters and serve in festive bowls or bags. Enjoy your spooky treat!

Note:

By adding just a few kernels at first, you can test if the oil is hot enough to pop the popcorn. If you add all the kernels before the oil reaches the right temperature, they may cook unevenly, leading to some being under-popped or burned.
