  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • A generous pinch of salt
  • 1 cup dark chocolate wafers or chocolate chips
  • 3/4 cup roasted pecans, finely chopped
  • Christmas sprinkles

  1. Before you start please read tips for perfect toffee below*
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Have all your ingredients measured and ready before starting.
  4. In a medium-sized pot, combine butter, sugar, and salt.
  5. Stir frequently over medium heat until the butter melts.
  6. Bring the mixture to a boil (patience is key; avoid high heat).
  7. Once boiling, attach a candy thermometer without it touching the bottom of the pan.

  1. Stir occasionally as the mixture thickens. It will gradually turn a golden brown hue.
  2. Keep cooking the toffee for about 10 min. It reaches the hard crack stage at 305°F/151°C on the candy thermometer. Your toffee is ready when it reaches a medium-dark golden brown color.
  3. Immediately remove from heat once the temperature is reached.
  4.  Pour the toffee onto the prepared baking sheet, spreading it evenly. Allow to cool for 3-5 min.
  5.  Sprinkle chocolate wafers over the toffee. Allow them to melt, then spread the chocolate evenly.
  6.  Sprinkle finely chopped roasted pecans and Christmas sprinkles on top.
  7.  Transfer to a refrigerator to cool for 10-15 min.
  8.  Once fully set, break the toffee bark into irregular pieces using your hands or a knife. 
  9.  Keep the toffee in an airtight container at room temperature, stored in a cool and dry place, for up to 2 weeks.
