Fluffy Buckwheat Pancakes
Start your day on a scrumptious note with our Fluffy Buckwheat Pancakes! Created with love and a unique mix of Organic Whole Grain Buckwheat Flour, Oat Flour, and a touch of Xanthan Gum, these pancakes are a celebration of flavors and fluff that will leave you craving more.

INGREDIENTS:
- 1 cup Organic Whole Grain Buckwheat Flour Blend
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk (see notes to learn how to make your own)
- 1 large egg
- 2 tbsp melted butter
- Oil, for cooking
INSTRUCTIONS:
- In a mixing bowl, whisk together the Organic Whole Grain Buckwheat Flour Blend, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg and then add buttermilk and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; it’s okay if there are a few lumps.
- Heat a griddle or non-stick pan over medium heat and add a small amount of oil.
- Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat until all the batter is used.
- Serve your Fluffy Buckwheat Pancakes warm, topped with your favorite syrup, fresh fruit, butter, or a dollop of whipped cream. Enjoy!
Note:
If you don’t have buttermilk on hand, mix 1 tbsp white vinegar or lemon juice into 1 cup of milk. Let it sit for 5-10 min until it slightly thickens and curdles.
