Ingredients:

  • 1 cup (2 sticks) butter, at room temperature
  • ⅔ cup plus 2 tablespoons (158 grams) granulated sugar
  • 1 egg
  • ¼ cup lemon juice, from about 1 large lemon
  • 1 teaspoon vanilla powder
  • 3 cups (360 grams) all-purpose flour
  • ¼ cup (31 grams) poppy seeds
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt

Description

  1. In the bowl of a stand mixer fitted with the paddle attachment or with a hand mixer, cream the butter and sugar together until well combined and lighter in color, about 3 minutes. Be careful not to overbeat. Add the egg, lemon juice and vanilla powder and mix until incorporated.
  2. In a medium-sized bowl, whisk together the flour, poppyseeds, baking powder and salt. Add to the butter mixture and mix just until combined.
  3. Refrigerate until cold or freeze for later use.
  4. Preheat the oven to 350 degrees. Once chilled, roll the dough to ⅛ inch thick Use a cookie cutter or glass to cut 3-ish inch rounds and place them on a parchment-lined cookie sheet about an inch apart.
  5. Bake for 12-15 minutes, until the edges of the cookies are golden brown. Store in an air-tight container for 3-5 days
