  2. Add 2 cups of water and ¼ teaspoon salt.
  3. Bring to a boil and stir carefully. Reduce heat to the minimum.
  4. Add two tablespoons butter and stir again before covering the pan.
  5. Open and stir occasionally, but be very gentle and don’t do this often as you’ll break tender seeds.
  6. Let organic millet simmer for 15 minutes. Remove from heat and leave for 10 minutes more. Do not open during this time.

Fluff up your millet with a fork and add more salt if needed. Serve this grain warm as it tastes best fresh. You can use organic millet seed as a substitute for any grain. Cooking Instructions

  • For a fluffy, light millet, you want to use 1 part dried millet to 2 parts water.

  • Bring the water to a boil and then reduce the heat and cover the pot.
  • The millet will need to bubble away for 15 to 17 minutes, or until all the water has been absorbed.

I'm boiling this to eat as a rice replacement (much missed, rice!) and I like it very much. I like it better than quinoa, which I had tried before. Now I finally can look forward to my dinner again. Millet tastes more like a grain, and as a seed it is healthier for you. If for any reason you have to be off grains, I encourage you to try this. If you have friends or family who are always eating quinoa in salads, soups, etc; do them a favor and make them something with millet. They will be pleasantly surprised. I wish I had tried this product earlier.
I’m eating millet as an alternative to wheat. It’s a low lectin (protein) carbohydrate. Better for your digestion and gut health and keeping the inflammatory response of your immune system low.
This is a great alternative or substitute to quinoa or amaranth. It is a better price per pound. The protein profile is not quite compete; however, overall, it is a nutrient rich food. I use it in place of rice. I also mix it with oatmeal in the morning.
