Tropical Quinoa (Health Bars)
Ingredients:

  • 1½ cup dry raw quinoa
  • 2¾ cups water
  • ¾ cup full fat coconut milk
  • 3 flax eggs
  • 3 tablespoon whole chia seeds
  • 1 cup dried mango
  • ½ cup dried papaya
  • ½ cup dried figs
  • ½ cup honey or agave syrup
  • 3 cups shredded unsweetened coconut
  • ¼ teaspoon himalayan rock salt

 

Instructions:

  1. Rinse quinoa by placing it in a strainer and running it under water for 1 minute. Transfer for a medium sized saucepan, add water and cover. Bring to a boil, then reduce to simmer for 20-25 minutes. Don’t remove the lid while cooking. Once complete, remove lid and set aside.
  2. Combine coconut milk, eggs, and chia in a small bowl. Stir and set aside.
  3. Preheat oven to 325F and line a 9×13 pan with parchment paper across both sides for easy lifting and set aside.
  4. In a large bowl combine quinoa with the coconut milk mixture. Stir until fully combined.
  5. Add remaining ingredients.
  6. Press firmly into prepared pan and bake for 30-40 minutes or until lightly golden.
  7. Remove from oven and allow to cool for 20 minutes. Slide out of pan and continue to cool for another 40 minutes before cutting.

Vegan Mango energy bites

Ingredients:

  • 1 ¼ cup (150 g) raw walnuts or cashews
  • 1 cup firmly packed (5.5 ounces or 155 g) dried unsweetened mango
  • 10 pitted medjool dates
  • 2 Tbsp (20 g) hemp seeds
  • 1/3 cup (27 g) unsweetened finely shredded coconut
  • optional: 1 lime, zested
  • Pinch sea salt

 

Instructions:
1. Preheat oven to 350 degrees F (176 C) and arrange nuts on a baking sheet. Toast for 8-12 minutes or until light golden brown and fragrant. 2. Set aside.
3. In the meantime, add dried mango to a mixing bowl and cover with warm water (don’t skip this step or they’ll be too tough to blend). Let soak for 5-7 minutes or until soft and pliable but not too soggy. Then drain, lay on a towel, and pat off excess moisture. Set aside.
4. Add nuts to a food processor and mix into a fine meal. Remove from bowl and set aside.
5. Add pitted dates and soaked, dried mango to the food processor and mix until a rough paste/sticky dough forms.
6. Add nut meal back in, along with hemp seeds, shredded coconut, lime zest (optional), and sea salt. Mix until it forms a moldable dough. Add more coconut or hemp seed if it feels too sticky or wet. Add more dates if it’s too dry.
7. Scoop out rounded Tablespoon amounts and roll into little balls in the palms of your hands. Then roll in more shredded coconut or hemp speeds, or a mixture of both.
8. Enjoy immediately. Store at room temperature up to 3-4 days, in the refrigerator 1 week, or in the freezer up to 1 month.

Mango-Cran Immunity Smoothie

Ingredients:

  • 3-5 pieces of dried mango, soaked
  • ½ – 1 tsp. camu camu powder
  • 1 frozen banana
  • 1 cup coconut water or the water used to soak the mango
  • ¼ cup shredded coconut
  • ½ tsp cranberry powder


Preparation:

Blend all ingredients in a high speed blender except the banana. Add banana last and blend until smooth.

    I have ordered them before and that batch was more on sour side of the flavor which I absolutely loved. The one I just received is very very sweet. I love mangoes but it is going to be a while until I use all of this one. I can actually see white crystallized sugar dust on them.
