  • 5 egg whites (or a suitable vegan substitute)
  • ½ cup water
  • 2 cups organic ground flaxseed
  • 3 packets stevia
  • ½ cup walnuts (chopped)
  • ½ cup cranberries (dried)
  • ½ cup dates (chopped)
  • 1 tablespoon baking powder

Instructions:

  1. Blend together stevia, egg whites, and water until smooth. Use a mixer, blender, or food processor.
  2. Add flaxseed and immediately after add baking powder so that it mixes well with the ‘flour’. Stir well.
  3. Add dried fruits and nuts and stir them carefully into the dough.
  4. Put the dough into an oiled loaf pan and bake for about 45 minutes at 325F. Preheat the oven first.

When baking with flaxseed, always remember to assess the ‘dryness’ of the dough and add more liquid if necessary. This bread will taste great hot or cold, with butter or jam. You can use different nuts and dried fruits to suit your taste.

  2. One by one add bananas, almond milk, melted butter (or a vegan substitute), and egg. Stir every time to combine, but don’t overdo it.
  3. Add walnuts or any other chopped nuts.
  4. Bake at 400F in a pre-heated oven for about 20 minutes.

Let your muffins cool for at least a minute before taking them out from the form. Bear in mind that when you are baking with flaxseed, the final product wouldn’t be as ‘fluffy’ as with regular flour.
